Rey didn't steal those books and build that lightstaff to 'let it die.' She's already got her first two students, Finn and Jannah, lined up.

Luke being dead makes it kind of hard for him to do it himself. Rey as his student makes the most sense as the next person to give it a go.
I can imagine Rey taking up some students, than going to one of many Jedi sites and having group learning time with her two Skywalker masters (Luke and Leia). With Obi-wan and Yoda sometimes giving context to questions about the long past. And sometimes Anakin and Qui-Gon giving the whys, because the others won't.

Also, more to your point, Luke is a Force ghost and is able to still teach. Which, in my opinion, will lead to more powerful Jedi as they recognize the full depth of the nature of the Force. Honestly, Rey and Luke can keep the Jedi Order going while learning from past mistakes.
Luke's death was important but also not the end of the story.
And I heard Mark Hamill wanted to retire from (or scale back) his role as Luke Skywalker (and his character finished with sufficient fanfare in TLJ and TRoS, histrionic fanboi tears be damned).
And we've got the contemporary Hobbit trilogy being so horribly bloated and unfocused, while Fantastic Beasts 2 was a truly dire sequel, putting the merits and problems of the SW ST more into perspective.

Maybe. But I would love to have such a multi-dimensional, multi-generational, perspective on the Force. The Jedi Order would be able to truly learn from its mistakes, rather than running and hiding like the last masters did. What's the point of eternal life if one cannot pass on what they have learned?

The one fan theory I allowed myself to indulge in was that Skywalker would be a title adopted by a new generation of Force wielders who have grown beyond the old dogmas of the Jedi and the Sith.
I wasn't disappointed that they didn't do this, because let's face it, my wild-assed guesses have no right to end up in a real Star Wars movie, but I did like how Rey took on the name Skywalker for herself.
