Rey didn't steal those books and build that lightstaff to 'let it die.' She's already got her first two students, Finn and Jannah, lined up.
 
I hope the latter is the case. Rebuilding the Jedi is Luke's job, not Rey's.

Why would Rey not be capable?

He did that. If Rey doesn't then Luke fails.

The only thing I hope she will let go is the dogmas of both Jedi and Sith.

Luke being dead makes it kind of hard for him to do it himself. Rey as his student makes the most sense as the next person to give it a go.

Luke should never have died. Neither should Han.
And Luke is now a Force Ghost. Being dead should not stop him from restarting the Jedi. It's not like being dead in real life. Luke can now effectively live forever.
 
I can imagine Rey taking up some students, than going to one of many Jedi sites and having group learning time with her two Skywalker masters (Luke and Leia). With Obi-wan and Yoda sometimes giving context to questions about the long past. And sometimes Anakin and Qui-Gon giving the whys, because the others won't.

Ben Solo would be sat in the corner to talk to those student that touch the dark side.

Also, more to your point, Luke is a Force ghost and is able to still teach. Which, in my opinion, will lead to more powerful Jedi as they recognize the full depth of the nature of the Force. Honestly, Rey and Luke can keep the Jedi Order going while learning from past mistakes.

Luke's death was important but also not the end of the story.

And I heard Mark Hamill wanted to retire from (or scale back) his role as Luke Skywalker (and his character finished with sufficient fanfare in TLJ and TRoS, histrionic fanboi tears be damned).

And we've got the contemporary Hobbit trilogy being so horribly bloated and unfocused, while Fantastic Beasts 2 was a truly dire sequel, putting the merits and problems of the SW ST more into perspective.

Maybe. But I would love to have such a multi-dimensional, multi-generational, perspective on the Force. The Jedi Order would be able to truly learn from its mistakes, rather than running and hiding like the last masters did. What's the point of eternal life if one cannot pass on what they have learned?
 
I could definitely see him pop up to help Rey instruct the new new Jedi, I just think it would be better to have a living person as the main person leading the Order.

No decent SW movie in 40 years, completely ignoring The Return Of The Jedi to start with? And if RotS, TFA, and TLJ don't float your boat, then RO certainly will.
 
The only thing I hope she will let go is the dogmas of both Jedi and Sith.

The one fan theory I allowed myself to indulge in was that Skywalker would be a title adopted by a new generation of Force wielders who have grown beyond the old dogmas of the Jedi and the Sith.

I wasn't disappointed that they didn't do this, because let's face it, my wild-assed guesses have no right to end up in a real Star Wars movie, but I did like how Rey took on the name Skywalker for herself.
