No, this is closer to creating a whole new show around a character after establishing that he comes to a terrible end. Only it's worse, because it is now established that all the progress since the 23rd century has basically come to nothing, and only Michael Burnham Allmighty can get them back on track.

Why should we know before the show airs?So the show takes place in the Delta Quadrant? That would explain why none of the characters look like typical Alpha Quadrant species. But why would there be an abandoned Starfleet vessel in the Delta Quadrant in 2383, much less one with Janeway as a hologram aboard?
I would guess it's some sort of experimental ship designed to return to the DQ, similar to the quantum slipstream-powered Full Circle Fleet in the post-finale Voyager novels. As for why it's abandoned, maybe there was an accident with the experimental drive and it jumped to the DQ before it had a crew aboard. (Since it's a kids' show, I think that's more likely than the whole crew being killed.)
