All of the missing scenes in Voyager, the ones in between Tuvok or Torres working out how to save them all from certain death by using the technogubbin of the week, and the final captains log entry explaining how everything is fine now. Those scenes would be nice.
 
The scenes where Troi tells us why this time she couldn't read someone's thoughts, when it would've been useful
 
Chekov meeting Khan, Voyager leaving an alien spacedock where they have been for major repairs. Sisko shaving his head bald and then rubbing it in oil all over Cassidy Yate's body!! :p
 
How Data decided on a cat for a pet. He visited the pet shop on the Enterprise and had a variety to choose from, ending up with Spot.

Destroying the warp engines when it only would have taken a few minutes to replace the dilithium crystal circuit.

And those few minute wouldn't have made any difference in deflecting the asteroid.

And they wouldn't have been late to the deflection point if Spock had taken the ship out of orbit when he should have.

And Scott as chief engineer doesn't give his commanding officer advise just to hear himself make noises.

There's this moment in "Yesterday's Enterprise" that I thought might have had a deleted scene, but probably doesn't, but I'd like there to be.

The doors close on Picard and Riker in (I forget what room) and Riker looks like he's about to let loose with an argument with Picard.
 
I wonder if it was ever considered to actually have that Klingon voice (the one who says "Federation ship Enterprise, surrender and prepare to be boarded") be Worf.

Riker looked like he wanted to fight it out with Picard the entire episode, a deleted scene where Picard did something that resulted in Troi getting killed would fit.
