I'm not sure why "wormhole" would be an age-inappropriate term, but it was a pretty obscure term at the time. In physics and in science fiction, wormhole theory was a moribund field until Carl Sagan asked Kip Thorne to develop a credible FTL mechanism for his novel Contact. The use of the term in TMP was quite rare for the period. Maybe the record changed it to a more recognizable term, since without the visuals, it would've been unclear what a "wormhole" was supposed to be.
As for the placement of the Memory Wall sequence, it was supposed to go where the "Spock Walk" is in the final film. That sequence was created to replace the Memory Wall sequence when it proved unviable.
