They also saved him and the entire quadrant by making the Dominion fleet disappear in "Sacrifice of Angels".He has not started to be the Emissary yet. In one episode, a fake Emissary appears. And it was stated that there was a prophecy that a man whose life was saved by the Prophets would then become the Emissary. There's only one moment where the Prophets save Ben Sisko's life. It's when he falls into the fire caves together with Gul Dukat at the end of the final episode.

That's a bit loose interpretation of the term 'save one's life. By doing that, they only saved his career, and made his life better by helping him heal emotionally. But they did not save his life that time. They also saved him and the entire quadrant by making the Dominion fleet disappear in "Sacrifice of Angels".He has not started to be the Emissary yet.
