2008 is not 1979 or 1986. The book industry -- both the publishing and retailing sides -- has changed dramatically in the past decades, changes which have led to the situation pointed out by the original poster. Those changes will not be suddenly reversed by a single record-breaking blockbuster film.
WalMart will probably stock the STXI novelization, and maybe Star Trek 101. But if you've never seen a SF book at your local supermarket, you probably won't see either there.
As for the big bookstore chains... well, the S&S sales team managed to get a few copies per store of Planet X out to coincide with the last X-Men film, so who knows what they have planned for their fall sales calls? But I would be very, very surprised if anyone notices their local Trek section expanding in any way.
