And our local newspaper spelled Uhura "Uhuru" just this week.
Uhuru is also the spelling used by the credits to Star Trek VI: The Undiscovered Country. So, I guess it's an official variant and perfectly acceptable to use.

As I said on page 2, Uhuru is the actual, original spelling in (English character) Swahili. There was no feminine variant until GR came up with Uhura for Star Trek.
Yes, I read it. It's still notable that the credits were written incorrectly in that film (or perhaps edited by someone unfamiliar with Uhura but familiar with the Uhuru name).
