Personal preference?

1.) VOYAGER (grew up on it)
2.) DS9 (objectively the best and most interesting series IMO)
3.) Original Series
4.) Next Generation
5.) Reboot movies/Discovery/Animated seires/novels (Don't care)
6.) Applepies. Er, Enterprise.

Indeed, think about how shocked Sisko was with himself in Pale Moonlight, or the disgust that Bashir had towards Ross in Inter Arma, and this was at well into a far bloodier war.

However it's still early days

DSC and DSN are also seperated by over a hundred years, how do our standards/ethics etc.. compare to say those of the turn of the 18th into 19th century?

1) Star Trek
2) TNG
3) DS9 (Seasons 1-3)
and maybe TAS for a possible 4 and that's it.
