question about Friday's Child subtitles from 2008 TOS-R DVD

Sure, but most of those changes made it to onscreen material. Some scripted items never make it to onscreen dialogue, eg. the planet Neural, and Shran's name in his first "Enterprise" appearance. Christine Chapel did.

In those situations where the word is inaudible or never said aloud, the shooting script is useful. We know that the closed caption people go on their ear only, not 60s scripts. The closed caption writers should not, in my mind, be the final arbiter.
But then you have other production discrepancies over the years in scripts and on screen, ergo:

TOS S1 - "Where No Man Has Gone Before"

James R. Kirk

The majority of the rest of the series:

James T. Kirk (and I can't recall if the full pronunciation of "James Tiberius Kirk" was ever stated on screen during the run of the series itself - not including the later feature films).

Again as others have stated this is all made up off the cuff per the production needs of a particular episode, so there's bound to be various inconsistencies considering all the script drafts, and things that might change during actual production that are beyond the control of the author.
^^^
That's why everybody pretty much goes by whatever was actually shown on or heard on the actual soundtrack of a given episode, as that's what the audience saw and heard.

But I just explained why: so that the reader remembers to pronounce two short vowels instead of one long vowel.
Eh, English has all sorts of weird rules that apply to some words and not others, including words with double vowels that are pronounced as two sounds. (Like coordinate.) I think it's cool to have multiple approaches to pronunciation depending on species.
