The same reason we keep seeing T'Pol and Hoshi half naked, the viewers who are into that kind of thing like to see it.
I remember when the common complaint in season 1 was trying to sexualize everything. From the decon chamber to Trip in his underwear they did have a lot of eye candy. At least it seemed like they were equal opportunity about it. 
Personally, and maybe I'm the only one, I rather enjoyed the other half of the male eye candy in 'Two Days and Two Nights'! 
He can quit anytime he wants.
