Supposedly, one of the ideas for a fifth season was going to be a major refit, including the addition of a secondary hull.

This idea probably would've been dragged out, at least as a starting point.

on a related note, i cant recall that there was, but was there ever any ship seen that was a sort of a bridge between the Phoenix and the Enterprise-NX?

ive recently been working on a sort of next step in the evolution after the Phoenix, a sort of scoutish type prototype, based on a refited Space Shuttle. striping the wings and main engines, and retro-fitting the cargo bay to house the warp core, etc.. i dont have any images to show on it, all my sketches are by hand at this point.

does anyone have any suggestions on how such a craft would look?

Well there is Eaves' beautiful but unused concept for the NX-Alpha/Beta for 'First Flight':

Now THAT, I like. I get why they did what they did (to reuse the cockpit from "First Contact")... but I think that this would have been FAR better, and worth a few extra $$$ to make a cockpit mockup for.

@JuanBolio: I believe you're thinking of one of Eaves designs for a pre-NX class that was used in the intro.

The design I'm thinking of was just a sketch of the same kind as you and the OP posted, and appeared next to them in a compilation image of might-have-been NX-01s. There's a small possibility that I might be thinking of the design you posted, actually, but I seem to recall a distinctly triangular hull.

Don't know if this was an idea for the NX-01 or a different ship, but when I first saw it it was presented with the other two designs, and possibly one or two more, already posted here.
I gotta say that as soon as I saw this I thought "Romulan BoP." IF ENT had gone this route then encountered Romulans a century prior to TOS with similar ships then I could actually see the Romulans emulating the design of the guys who kicked their ass when they returned to have another try at what they thought were Earth forces rather than the Federation.

I could see it.

It also underlines how ENT could actually have had a more distinctive vision of what a pre TOS era could have been more convincingly like.

I've always thought this likely myself. The Romulans started emulating Earth designs after the Romulan War, which is why the BoP in TOS has a shape similar to that of Earth vessels. Afterward perhaps they adopted the Klingon model, leading to designs like the 24th century Warbird and Valdore-class. Though non-canon, I always thought this late-23rd century Romulan ship looked like a good intermediate design between the Romulan D-7s and the later Warbirds:

Also, I think the Scimitar bears a decent resemblance to Dominion battleships. The Romulans seem to be an imitative lot.
 
I get the impression from Drexfiles that Eaves was actually capable of much more, but the powers that were kept hamstringing saying stuff like, "make this ship look like that other ship ... nope, not close enough, make it even more like that other ship."

Well, yeah... it sucks when someone who has no real physical artistic or mechanical design capabilities decides that they're the one who should be making those calls, huh? :(

A good leader... ALWAYS... finds the most talented people, gives them their basic instructions, and then gets the hell out of their way. And only gets involved again if they fail to follow their instructions, or if the requirements change (due to external causes, not due to the whims of the "leader")

Or, in this case, has no knowledge of Star Trek continuity or history. :(
 
Remember, according to Doug Drexler, the guys in charge literally wanted to use the Akira design for the NX-01. With no changes. Luckily, they were talked out of it.

Interesting, I wonder if there any drawings in existance of what this might have looked like?

I would imagine that if there were, Doug would have gotten around to puting them up on his blog by now, hes already published detailed reports about every other aspect of the NX design.

I have seen fan versions of this, though none claimed any tie-in to season 5. They just wanted to see how the NX-01 looked with a secondary hull.

You know in defense of the NX-01 looking like an Akira technically the Akira is a rip-off of an Enterprise design that would have been used for the abandoned Academy TOS prequel film that was thought up with before The Undiscovered Country was made instead.
