No Kirk love interest for a change

I suppose she might have been studying here and there during the 5ym. Plus, some of her experiences during the mission might have given her a leg up. I imagine McCoy might have recognized her latent abilities and encouraged her/provided opportunities for her, despite his later rant about doctors arguing every diagnosis with him (that was due to his crankiness over being drafted)

May have been her first job, much as Chapel was a nurse first, then a doctor.

That was interesting, since in the present day nurse and physician are completely separate career paths (nursing school coursework may not even include all the subjects that are prerequisite for acceptance into medical school). After serving as ship's nurse during the five-year mission, she changed careers significantly by going for an MD (rather than an advanced degree in nursing), and was physician in TMP.
All we really know about Chapel's background prior to her introduction in TOS is contained in a single line:

Kirk: "I understand you gave up a career in bio-research to sign aboard a starship."

Nursing was apparently not her first career, but "bio-research" is conveniently vague.

Exactly. Chapel was slumming it aboard the starship, in hopes of finding Roger Korby. But we have little idea what she was slumming from.

We have a better picture of Marcus, who in both movies is a weapons expert of sorts. Perhaps this is what brought her to Starfleet as a lab tech at the early stages of her career - she was one of those Q department minions setting up the dummies to be targeted by tri-isophasic wristwatch blasters, exploding tricorders or strangling uniforms. She chose to pursue subatomic weapons and then pervert them to good in one universe, but at least remained competent on conventional torpedoes in another.

Honestly, Kirk didn't have a love interest in most of the original movies. Ilia was Decker's love, Carol Marcus was an old flame, no romance at all in THE SEARCH FOR SPOCK, there was a bit of a flirtation with Gillian in the whale movie but no great romance, no romance at all in THE FINAL FRONTIER, and only a brief dalliance with Iman in the the final movie . . ..

Wait, but he kissed himself, which was his lifelong ambition.

The Enemy Within, (Almost but not quite) Mirror Mirror, and Turnabout Intruder.

Was there a Kirkbot in What are Little Girls Made Of?
