@Phaser Two I did find some hits on the phrase "nickels to navy beans". Also, while "dollars to doughnuts/donuts" seems to be the most common form, other "dollars to ______" exist*, such as "dollars to dimes", "dollars to pennies", and "dollars to peanuts." Even "dollars to donut holes." Many of these date back to the 19th century. Point is, I think there is enough precedent and variation to allow for a writer to give a 22nd/23rd century update to the phrase.
