I tried making a greek eggplant pita filling, yeah I am not trying to make greek anymore. It was terrible(my fault, not the food). But I have fine tuned my meals now and my parents all the sudden gave me control of their diet so it would match my healthier one, minus the not eating meats, cheeses and fish but still going with healthier forms of each of those. I am making this week 2 rice dinners, 2 salads, 2 pita filling, and 1 fruit salad. So far the fruit salad I did right, so yea.
Eggplant can be tricky. It can go bitter, soak up a river of oil, dissolve in one place and stay solid in another..
Okay I'm eating this salad right now. It is green mango and orange capsicums (peppers). If I was super hungry I'd add some dried onions and chillie and thai basil but I felt like it straight. Because the green mango is soooooo good.

Alright, a more appropriate meal.
This is pretty typical dinner strategy for me; throw a bunch of vegetables in a pot, add whatever spices are around, and eat. Basically, it's:
-1/4 white onion, chopped
-1/4 sweet potato, cubed
-1/2 zucchini, sliced
-1 portobello mushroom, sliced
-1/4 cup cannellini
-1/4 cup edamame
Sautéed in 2 teaspoons of canola oil, water, and a splash of apple cider vinegar. I microwave the sweet potato and zucchini first, that way it doesn't take long to cook, the zucchini doesn't dissolve, and I don't have to use much oil. Seasoned with salt, pepper, tarragon, and fennel. Served over a cup of cooked spinach.

Looks great! I like my zuchinni in every stage though so I wouldn't cook it first, happy to eat it raw and warmed in that. And reading your recipe reminded me of herbs and flavour ideas I haven't cooked for a long time, that whole mediterranean thing. Everything is all chilies and lemongrass in my kitchen, I kind of forgot about tarragon.

That looks fantastic. I'm still working on making inexpensive, tasty veggie dishes. Turns out getting vegetables just right when cooking is harder than it looks!
