About three years ago, readers of the UK magazine SFX voted for their top 10 Star Trek moments, of which I agree one hundred percent:

1. Wrath of Khan: The battle between the Enterprise and the Reliant.

2. Best of Both Worlds, Part I - The ending

3. In the Pale Moonlight - Sisko confronts Garak

4. Wrath of Khan - Spock's death

5. Wrath of Khan - Khaaaaaannnnn!

6. The Motion Picture - First appearance of the Enterprise

7. The Way of the Warrior - The Klingon attack on DS9

8. The Search for Spock - destruction of the Enterprise

9. Call to Arms - The battle and the evacuation of DS9

10. City on the Edge of Forever - Keeler's death

All classic Trek moments in my eyes

For the general public as well, I'd say you're spot on with the reference to The Trouble with Tribbles. Many people that aren't fans remember that one.

That's the great thing about TOS...there are many, many memorable things...so many that some people describe episodes by the defining characteristic of each.
examples: "The one with Krk fighting the lizard man" (Arena) "The one with the albino gorilla" A Private Little War( am I right?!?!)
 
The first 'moment' that comes to mind would be Kirk and Spock leaping into the Guardian of Forever and disappearing.
 
If we mean iconic in the wider culture, they mostly come from the original series:

Kirk fighting the Gorn
The whole of The City on the Edge of Forever and The Trouble with Tribbles
The Talosian and "green skinned space babe" scenes in The Menagerie
Spock getting his brain stolen...
Any time a redshirt got killed

Also, from the films: "KHAAAAAAAAAAAAAAAAN!"

TNG arguably has a few. Probably something to do with the Borg, and increasingly, given the attention the episode's got in recent years "THERE... ARE... FOUR... LIGHTS!" from Chain of Command.
 
The final scene from TSFS:

Spock: My father tells me you came back for me
Kirk: You would've done the same for me
Spock: Why would you do that?
Kirk: Because the needs of the one outweigh the needs of the many.

That's what its all about right? Friendship and giving a damn.
 
One that hasn't been mentioned yet (and is famous even for non-fans) is the fight between Kirk and Spock in "Amok Time."

Just the music itself is iconic (and hilarious!).
