I love the suggestion of Regeneration - it's got a homage to The Thing in the opening sequence and is very much done in horror movie style. It also has a great "less is more" approach where rather than thousands of borg and borg ships - the episode makes is terrified by just a very few.

Another cinematic episode along the same lines was Impulse, which was a good old-fashioned zombie story with a Vulcan twist.

Broken Bow, especially part two is very cinematic. I also - think some of the World War II stuff in Zero Hour was pretty cinematic, including the shuttlepod being attacked by WWII era planes.
 
Having just recently rewatched "Regeneration," I'd have to agree that it had a nice cinematic feel to it, thanks in no small part to Brian Tyler's excellent score. I also thought his score for "Canamar" elevated what was an otherwise unremarkable episode. It's too bad he never did any music for any other episodes.
