If Prime universe Chekov is as smart as NuPavel, he probably read a lot and remembered a lot. Plus, a security guy needs basic medical care skills, just as a cop today would.As a security officer and former first officer of the Reliant it's not surprising he's picked up some more advanced first aid over the years. But yes, you can tell they rewrote the parts to fit Chekov and Scotty.
