I don't know, I've seen some people who seem to be honestly pissed at the thought of people not using animal based products.
Because of the assumed implication. By not eating meat it is them saying they are better than people who do eat it. Even if the individual never even says that, they probably heard someone else say this and thus they go with the stereotype that is how all vegans think

No, some people do seem to really hate vegans for some reason.

I have nothing against the practice, but I find the name of it strange. Why "vegan?" What was wrong with "vegetarian?" Besides, to my science-fictional eye, it looks like it refers to someone from the Vega star system (though that's pronounced differently).

As someone who's actually seen these kind of interactions kind of first hand, mostly it's online in the comments section of posts from the vegan animal sanctuaries I follow, I'm going to have to disagree with you.
For me I don't doubt their is some actual hate. But deep down I think it all comes from people feeing like they are being judged for liking to eat meat Some don't fall for the stereotype but then others, The complainers are just easily triggered even it is as simple of someone saying they don't like eating meat. They might try all sorts of justifications to make being vegan as a bad thing but it always circles back to being insecure over being judged negatively. IMO.

I can't believe I have to explain this to you, but vegetarianism and veganism are not the same thing.

It was created in the 40s to distinguish vegans from vegetarians. It is just the beginning and end of the word vegetarian.

I think the other thing is people find it strange anyone wouldn't want to eat meat because of just good meat tastes. It's like saying you don't like ice cream.

People can also be sticklers to biological imperative theorizing. Since humans are omnivores. Designed to eat both meat and veggies, the idea of people doing something that seems to go against that is head scratching . Or even unhealthy. Anytime someone is skinny and they don't eat meat, lots of people make the assumption they aren't getting enough protein.
