As far as I know, the last time he gained and then lost a lot of weight for a role was for Vice and then Ford v Ferrari right after that, and that was over five years ago. He's 50 now, it wouldn't surprise me if he stopped doing these weight losses and gains.

This is one of the parts that intrigues me the most. I hope that it is actively consistent with what was established in Iron Fist (meaning, not just doesn't contradict it but flows with it), perhaps even to the point of continuing that storyline just a bit. There were threads that still needed wrapping up.
It also has the potential to establish how realms such as Ta Lo fit together in the grand cosmological scheme.
Eyes of Wakanda is seemingly still scheduled to drop sometime in 2024.
Not sure there will be a direct connection like with Wakanda and Talokan via Vibranium. Might be a "travelogue" with Wakanda reaching out to K'un Lun or Ta Lo. That may depend upon whether Latveria winds up landing on the 616 or elsewhere in the multiverse like the Fantastic Four did. At any rate, I do like the traditional vision of Latveria that you described and hope that they run with that.On a slightly different tack, I'm curious how the MCU will handle Latveria, The comics like to portray as a quaint backwater stuck in the 1800s hiding advanced technology in ancient castles. (But only Doom has the access)
I would totally be down for some Savage Land action.Come to think of it, I wonder if the MCU has plans to introduce the Savage Land. I mean, it's a land of dinosaurs -- who wouldn't want to put that onscreen?
