I didn't mind the Zombies episode of What If? but if I were to put together a list of episodes I'd want to see expanded to a full series, it would be pretty low on the list.

Marvel Zombies may be the first MCU production I choose not to watch. I don't care for modern zombie fiction much, since I'm too squeamish, and I didn't like the What If...? zombie episode.

I checked out a couple of volumes of Marvel Zombies just to see what it was about. You really aren't missing anything. If you want to read about Supers going bad, DC's comic version of their video game is much better. Well, it's better in the beginning because it really drags after a while.
