FACT: Captain Kirk's originally scripted last words in Generations were,
"It's buried under ... the big "W."
(congratulations to anyone who gets that) 
FACT: An early draft of "Errand of Mercy" called the enemy race the Kohms. They were described as fur-wearing Asiatics. Coon revised the concept to be the Klingons, to Roddenberry's displeasure, who made sure to use the Kohms in "The Omega Glory."
FACT: Sean Young was considered for the role of Saavik in The Wrath of Khan, then again when they were considering recasting for The Search for Spock, and briefly when the character was intended to be in the final film, The Undiscovered Country.
FACT: After the failure of Dune, Alejandro Jodoworsky was briefly considered a contender to direct a Star Trek film. His plans for Kirk's ritual castration and artificial conception of a child with Spock were wildly unpoplar with both the studio and Roddenberry, which quickly aborted the project.
FACT: When redesigning the Klingons for Star Trek: Phase II, Gene Roddenberry issued notes that the species were to wear more fur and have more nonwhite actors, preferably Asian. When the series became the film Star Trek: The Motion Picture, the fur was abandoned in favour of samurai-style costumes, and elaborate head ridges were considered preferable to racially inclined casting.
FACT: Before leaving Star Trek: Voyager, Ron Moore pitched a Star Trek series to Paramount, about a future where the Federation is destroyed by a Borg attack and a rag tag fleet of survivors fled through the cosmos. Paramount passed on the idea, as they had already optioned a similar concept involving the fall of the Federation by Robert Hewitt Wolfe. They eventually passed on Wolfe's concept as well - and he would repurpose it as Gene Roddenberry's Andromeda.
FACT: Gene Roddenberry was initially resistant of adding any explicit references to the original show in the crew, such as established aliens, until David Gerrold suggested adding a Klingon. Gene relented by considering casting options for a Kohm character, but when the selected actor - Michael Dorn - was found to have an allegry to fur, the character was revised to be Klingon.
FACT: While Spock's eyebrows were made from yak hair, Tuvok had to do with ox.
FACT: Made aware of its development in his declining months, Gene Roddenberry contributed three ideas to the creation of Deep Space Nine: A nymphomaniac bald alien girl of unknown heritage, a robotic-like female first officer called April Winters, and that the space station should orbit Omega IV, featuring a cross Kohm-Starfleet crew. The first idea was the starting point for the character of Odo, the second formed the basis of the Bajoran-Starfleet crew, and the April Winters idea morphed into the character concept of Melora Palazar, which was eventually abandoned.
FACT: While the Bajorans were designed as an analogy for displaced people everywhere in "Ensign Ro", it was decided early on to tone down the Palestinian subtext.
