If Not Ezri...

...then who'd you have added that last season?

Or how would you have done the character differently?

(And come to think of it, who was DS9's science officer that last year, and who was their counselor the previous 6?)
I can't answer that I really like Ezri.

I still don't know what a science officer is for. Are they called each time there is something scientific going on? Like a science fair or something?

A science officer is for a vessel of exploration that encounters anomalies and all the rest of it. Not really for a station that's just a transport hub. Although a science officer did become relevant given the wormhole and the unexplored Gamma Quadrant beyond that. Funny dat wormhole should just appear to justify that.

Well, that's why they didn't need one for the last season. They didn't do any exploring then.

I never had a problem with either Ezri or Jadzia, but I've always wanted a Klingon Science Officer.

However, a male Dax would have been a nice change.

It's handy to have one for all the times they went out in the Defiant and could have landed in unknown conditions. Better to have one and not need one than to need one and not have one.

I would not have filled the position at all.
DS-9 was in the middle of the Dominion War arc, they had no real need for a science officer and they had a strong enough ensemble that they carry through with the same stories perfectly fine with one less person.
Ezri wasn't even a Science Officer, she was a Ship's Counselor so adding her only brought Dax's knowledge to bear.

Ezri was a likable character, but they really could have done fine without her.

Well they couldn't have done: Afterimage, Prodigal daughter, Field of Fire, Till Death Do us Part without her.

And they would have had to change substantially half of the stories if she wasn't there.

Prodigal Daughter was more or less a mistake: the writers were charged with a Sisko/Prophets story, bungled it, and came up with this instead.
