"Shrimp sauce" as in the stuff that's basically just ketchup and horseradish mixed together? I think you'll be fine as long as it's refrigerated. Those "sell by/use by" dates are conservative guesses. If it smelled fine and had nothing visibly wrong with it should be good to eat. If you didn't feel anything after two-three hours you're in the clear.
