I hope the opening scene for STXII is...

For me, it would be the dismanteling of the brewery.
I wouldn't be surprised if they actually did this. Or at least a scene showing them putting the last touches on a newer one.

Scotty: "Well, that's more like it" (or something or other)

My question is would people like to see it follow the general aesthetics of the rest of the ship (as it well should have) or look more like a gussied up version of the TOS one?

Everything should follow the aesthetics defined for the movie. The old stuff is done.

This, but make it obvious that even with the concealing paneling or whatever final touches the Engineering was meant to recieve that we are still looking at the pounding heart of a starship when we see Engineering, not just a larger room with a lava lamp in the middle.

Mmm... drop us right in the middle of a phaser fight where we don't know what's going on, until we see a familiar face, Kirk or someone, or a red shirt.

An explosive space battle.

We'd open with Mike's "Star Trek" track...a few seconds of tense silence...and then a great big KAH-BOOM--to give the audience a great big JOLT in their seats!

We then see the Enterprise evading disrupter blasts coming hard and fast. She pulls away from the camera, revealing the enemy ship.

Cut to the bridge, Kirk barks, "REPORT!"

Etc.

The V'ger probe being eaten by the Doomsday Machine. The Chrystaline Entity from NG is videotaping it.

The Enterprise is destroyed and everyone onboard is killed in the first five minutes, forcing Admiral Pike to come out of retirement and put together a new team -- starring Colin Farrell as Finnegan, Christian Bale as Mitchell, Matt Damon as Sam Kirk and William Shatner as Grandpa Tiberius.

"Your father was captain of a starship for twelve minutes. He saved 800 lives, including your mother's and your brother's. Your brother saved the entire galaxy before he was even a captain. I dare you to do better."

"Sorry, I got a wife and kids. I'm gonna go do something safe on Deneva."
