How Old was McCoy in Encounter at Farpoint?

Yup, 137 years was what Data said, and what McCoy (or whoever this nameless character played by DeForrest Kelley was 
) accepted.
Incidentally, that (in combination with the later established dating for the episode) would give his birth year as 2226-2227 or so. A bit younger than the age of the actor during TOS, but no matter, close enough for lambada IMHO.
In "To the Death", IIRC, Miles O'Brien expresses the wish to die peacefully in his bed at 140. It would thus seem that few people live to such an age in the 24th century, and virtually none beyond that, as surely O'Brien wouldn't be hoping for an early death. OTOH, the expectation seems semi-realistic, similar to somebody today wanting to live to hundred or hundred and ten. So apparently many people live past that kind of age in the future.
FWIW, TAS "Counter-Clock Incident" pegged 23rd century military retirement age at 75, and suggested that this was later revised upwards. In the 2360s, Mark Jameison, past eighty, would have been an active starship captain if not for the disease addling him.

Actually, Picard was like 60 or so when TNG started, so he's closer to 75 in NEM.

Nemesis was in 2379, he was born in 2305...making him 74ish.
No, Chekov served as XO on the Excelsior, commanded the USS Undaunted, and later became an admiral and a teacher at Starfleet Academy. Uhura recruited him for a couple SI missions during the Dominion War, though.

So how old was Spock by TNG? If humans can live 150 years and Vulcans live 200 should someone half-Human and half-Vulcan live 175 years? Would it depend on which species has stronger genes? I don't know when Spock was born, but it seems to me that he is living the average lifespan of a purebred Vulcan.
Spock was a few years younger than McCoy. I'll guess that Spock was 130 when he met Picard and Data. But that's just a guess.

Data:137 years Admiral, according to Starfleet records.

What was the story about? I'm about to purchase it anyways, but I'd like to have an idea of what his function in the story is..
looking into this - this question is more complex than you first think - based on later episodes, he's about 137, however it seems the original intent was for the show to be a lot closer to the TOS than later established (that or a continuity error occurs). The only "real" dating reference we get is Data saying that he was a member of "the class of '79", which must have been a reference to 2279.
