Everything. I hate to think how many times...
I have seen everything that Paramount has made with the STAR TREK name on it, in fact I have everything on DVD or VHS tape that is currently available.

All of TNG, most more than once, and all of the movies. Working on all of TOS -- only two dvd's to go. Plus most of DS9, I don't remember how much Enterprise, a few episodes of Voyager and one episode of the animated series.
I accidentally voted 5 series and 11 movies, but it should've been 4. I still haven't seen all of TOS.

I must say, I am genuinely surprised that I am not in the minority here! It makes me feel like a little less of a geek to know that there are so many others just as geeky out there! I've only seen everything through once, but I've seen TOS at least 2 or 3 times and all the movies mltiple times. I'm working on making it through everything again, this time with my wife.
I have seen it all multiple times. I own it all as well.

I had a strange feeling when I answered this. I am a life-long Star Trek fan, but I realised, almost suddenly, that I have not seen all of the episodes.
I have seen all of the Original Series and all of The Next Generation and all of the films several times over. We own them on DVD.
However, due to time constraints, and a sense that I wanted to save some great Trek for later, I did not watch Deep Space Nine when it first aired, and I am only now watching the entire series, in sequence, as we now own it. We are really enjoying it, and I am glad that I saved it.
Also, after several open-minded attempts, I was unable to enjoy Voyager. However, as my dislike of the Abramsverse increases over the next few years, I anticipate that I will turn to Voyager once again.... also my shelf has a gap in it and that bothers obsessive me.
I have seen 2 + seasons of Enterprise, and will eventually own them all. This is mostly because I have not had cable for more than ten years and I wait until I can afford seasons of shows I enjoy.
I have read five Trek books, and have not yet seen the animated shows... however, I have seen a few episodes of the online Orignal Series "continuation" - I forget the name - so I think I get some points there.

Had to say 4 series because I stopped watched ENT at a certain point, and I never saw the animated ones.
I still have yet to see The Animated Series. Should probably do that one of these days.
I've seen some random episodes of TOS, and most of it was a long time ago so I don't remember it very well. Same is true for TAS. I have a vague recollection of seeing some of the reruns when I was young, but it's not like I remember it well. I've seen all of TNG and DS9, and own them on DVD. I am pretty sure I've seen every episode of VOY but most of it was so boring that I've blocked it from my memory. I've seen the majority of ENT, but not all of it. I kinda stopped watching for a long time in the middle of the show's run. I've seen all of the feature films.
