Besides the Animated Series, I watched each series and film at least twice or more: once when they come out on the live screen, and a second time when they came out on DVD.
However, I probably watched TOS at least 3-4 times, though.
I watched most of the episodes one time on the Sci Fi Channel . Then I watched them all on over again on the first, second, and third release of the DVDs (i.e. jewel case version, regular season set, and Remastered Version).

Now, I only have DS9 DVD sets, so if you're talking about sitting down with the DVDs, then my answers below are valid only for DS9.
TOS - uncountable. I've been watching since the premiere in 1966. I do also have a "ahem" copy of each episode on VHS, and have watched those tapes twice through.
TNG - I don't think I missed an ep in its original run and have probably seen all of the eps at least twice each.
DS9 - just twice. Once on the original run and once on my DVDs. Planning another go through soon.
VOY - just once. Wouldn't be able to stomach another go round.
ENT - Season 1 once, first 4 eps of season 2 once, a smattering here and there of S3 and S4. Do not care to ever see any of it ever again.
I forgot - I do have TAS on DVD. Saw this twice as well. Once on TV and then watching the DVDs. Some of them were kind of interesting and fun, but I don't think I'll watch them again anytime soon. I didn't really care for it. I bought it for the novelty (and it was pretty cheap!).

You should give season 3 of ENT another shot I really enjoyed it.

I've never sat down and watched an entire series that was being rerun on SYFY or SPIKE, so I don't include individual episodes from those rebroadcasts. I didn't even see TOS-Remastered in its entirety in syndication...

TOS - Lost count over the years, must be in the tens, and I'll keep watching it till I die, and maybe beyond, depending on what kind of entertainment they have in the afterlife...
TNG - Not too far behind, but again, lost count. Not too bothered about watching this again

It's hard to say how many times I've watched each series in its entirety. I watched a lot of Trek via random repeats over the years, bits and pieces at a time, and not always in chronological order. I've only seen a handful of TOS episodes that way.
When I became a fan of Trek, it was at the beginning of TNG's 5th season so I started watching Trek first-run at this point. I had to catch up on seasons 1-4 via repeats. I watched a lot of TNG repeats over the years, and it wasn't until I bought the DVDs that I was able to re-watch the series straight through. I figure I've probably seen episodes like BoBW 20 times, but if I average it out, I've been probably seen TNG in its entirety about 10 or 12 times.
DS9 I watched in its entirety during its original run. Didn't see a lot of reruns of DS9 so I didn't truly get to re-explore the series until the DVD release. So I've probably only seen DS9 in its entirety about three times. I'm currently re-watching it now.

There is Star Trek. (what many call TOS)
Then there is a quantum leap down to all other Trek. I like it fine. But TNG once, DS9 twice, VOY once, ENT .2.
TOS: Not sure. I watched it quite a bit on TV as a kid in the 60's and 70's. The last time I saw the entire series was sometime in the mid 80's. It's high on my list of things to watch. I do not yet have it on DVD.
