Okay, the voices in my head made me research all this paper-related stuff some more.
Clipboards: The metal ones appeared at least twice in each pilot (one can be spotted on Delta Vega), then were promptly obsolesced by the debut of the electronic Feinberger version in Corbomite.
Books: I found an additional book in Balance of Terror, on the Chapel podium, as well as a stack of books in the second pilot's rec room. (Also note in Court Martial that Cogley appears to write on something that looks like a manila folder.)
Books are also pretty common in various crew quarters (the following examples are not exhaustive).
Below I have compiled everyone's contributions, but I did not have the patience to track down every example of books in crew quarters.
As an addendum, I'm listing separately the items that seem to belong to such an earlier time period that they feel different from the examples above. I recognize there are some judgement calls here; some might prefer Cogley's books to move down here, or Flint's most recent manuscript(s) to move up. I guess I gave extra weight to Cogley since he's still an active part of Federation society.

FWIW, those paper labels on record tapes showed up more times than I realized. I've been able to find them in the first nine consecutive Kirk episodes (Where No Man, Corbomite, Mudd's, Enemy, Man Trap, Naked, Charlie, Balance, What Are):
JPGs sourced from TrekCore; PNGs, from P+. All have been cropped.
In the next five shows (Dagger, Miri, Conscience, Galileo, Court), I consistently saw record tapes but found no labels. At that point I stopped looking, and now believe that the production stopped using them after Korby got deleted.
Note that spotting an unlabeled tape doesn't necessarily mean that episode had no labels in other scenes, or even elsewhere on the same table or console. Just as both labeled and unlabeled floppy disks would later cohabitate in the real world, you'll see both kinds of Sneetches on these early Trek beaches.

"Is There in Truth No Beauty" - if you have a 50" or larger TV, and aim for a nice 120" one to really get a good bird's eye view, keep an eye out for Larry Marvick's thumb in one brief moment as he had slammed it in something and his thumbnail is all black'n'bruised.

The correct spelling is "Triskelion" and I never noticed the third-from-last letter before... 
I love the juxtaposition and parallels of Kirk vs Bailey and Balok vs Kirk in "The Corbomite Maneuver". Both playing poker and bluffing in their own ways... bonus points for lots of little moments like Rand heating coffee with a hand phaser for creative thinking, Balok's numerous fillings and ADR, and how Bailey was the ideal choice for Balok (in an episode that surely helped inspire TNG's "Hollow Pursuits" and "A Matter of Honor"?) It's not the fastest-paced of stories, but it's got all its plot logic in order and then some. 
I don't recall seeing this one since the original blu-ray release, if even that, that's how far back this goes...

Here's something I just noticed today. Some nice attention to tribble color continuity across the soundstage when the captain and first officer beam over to K-7 for the last time.
(Not shown here is that the big brown one in Kirk's hand of course matches as well. Also not shown here are the parts I cropped away from these very helpful TrekCore-provided images.)

I just noticed that Stella Mudd shares a dressmaker with Martha Leighton:
We don't know that they ever met, but maybe Stella was on Planet Q at the time of "Conscience." She could have been in the theater audience during the teaser and Kirk would never know it.

Funny how this never registers with me when the episode is playing, but then it's not supposed to. They're in "Dr's. Office" and you can see into the "Exam Rm" behind Spock. The wall that should be right next to the letters "Dr's" on the floor plan is out of there so the camera can look right through it. Then they put it back in place for the reverse angle.Amok Time…
