I don't blame Alex Kurtzman for moving Disco out of the pre-TOS era (I guess they got tired of listening to the canon fanatics squawking about "This violates the continuity established in season three, episode nine of ... ").
Now the haters are complaining that Kurtzman's jump to the 32nd century is itself disrespecting canon ("He hates Trek! Why can't he work within established canon?")

I watch Star Trek to be entertained. Is it ever perfect? No. But it gets pretty close sometimes. The people who see it as a universe that has to remain perfectly consistent? Well, if that’s how they get their enjoyment that’s their choice. But I’m honestly not sure how they got through the Klingon change in TMP with that need for consistency.

I love Star Trek Discovery, I've loved all 3 seasons despite some of the eye rolling stuff they do.
I loved all of the short treks but why can't things like Calypso be their own thing?

And this hyper-obsessiveness with canon is big enough that the production team finds it important enough to comment on.
The rest matters in one sense-we want to see what happened to our person favorites in this continuity. That is why each new show has a thread asking after Q, the Dominon, Ferengi, etc. etc. That's why I don't see Star Trek do anything new when it comes to its continuity. It will all tie together because that's what fans think they want and that is what production teams are willing to give.As I've said in the past, I think that fundamentally the desire to make things "epic" and self-referential directly cuts against efforts to make a fictional universe seem huge in scope. If there are thousands of inhabited worlds, and trillions of individuals, and we keep seeing the same few dozen individuals...do the rest even matter?
