Definitely the Wrath of Khan era uniforms, with belt and turtleneck. Damned striking, if you ask me.

The turtleneck makes them look like they would be hot to wear, but it is cold in space...

TOS movie uniforms are at the top of my list, with First Contact/late DS9 uniforms in close second. Always loved Picard's leather jacket, too.
