I understand the reason why Pocket focuses on 1 series over the others during anniversary years, but I prefer a year like '09 which is well balanced between each ongoing storyline.

Yes there is going to be a 3rd volume! It's on the release schedule.

I can honestly say that I am looking forward to every title coming. This is the first time I can recall looking at the list of upcoming titles and being so excited. I think Pocket Books is taking the Trek literature into undiscovered country and I'm looking more forward to reading these books than I am the upcoming movie. If I have to choose one book then I guess it would come down to either the new Titan book Over A Torrent Sea or The Romulan War by Michael Martin. Close call between the two.
