So many little Jem'Hadar ones, though some are kinda sad...
I liked Jadzia's interactions with Virak'kara over the course of "To the Death" - finding out about Jem'Hadar not needing food and sleep etc.
Bashir and Remata'Klan on how informative Keevan's surgery was, and later Remata'Klan remarking how obvious Keevan's plan was in "Rocks and Shoals".
Ixtana'Rax saying he won't be baited by prisoners to Kudak'Etan, who repeatedly ignores him, and other interactions in "One Little Ship".
Basically most things with the Jem'hadar...

On Empok Nor, Nog goes back to the roundabout, sees it tumbling through space, then mumbles "That's not right..." Then it explodes! Ever since, whenever something seems unsettlingly wrong I say in my head "That's not right..." I did it a few minutes ago...

In Our Man Bashir, Garak has crashed Bashir’s holosuiite program, and the young woman Julian had been kissing wanders away while Bashir is arguing with him.
Garak: I only want to point out that your lovely companion is leaving. Odd. She seemed so interested in your advances just a moment ago. I wonder what scared her away? Oh no. I do apologize. You must be incensed. In fact, if I were in your shoes, I’d grab a champagne bottle and shoot me.

 

[Noh-Jay Consortium]

Jake: "When was the last time you listened to Klingon opera?"
Sisko: "...When I was your age."
Jake: "There, you see?"
Sisko: "Yes. Do you?"

I always thought this father/son moment was a excellent example of how DS9 distinguished itself from the other Star Trek series.

Also in Our Man Bashir, after Bashir shoots Garak in the neck:
B: You’ll be fine. It’s just a flesh wound.
G: That was awfully close. What if you’d killed me?
B: What makes you think I wasn’t trying?
G: Doctor, I do believe there’s hope for you yet.

And, of course, "I think I joined the wrong intelligence service."

Damar saying to Leeta when arresting her “you certainly haven’t got anything to hide”! Casey Biggs, to me, reminded me of Alan Rickman as the Sheriff of Nottingham with his adlibs, although I don’t know whether it was actually ad-libbed!

Odo and Quark quarreling and calling each other names on the mountain in The Ascend. Constantly explaining their hate for each other.......

I like the final scene of that episode in particular:

QUARK: You remember back there when I told you I hated you, and you told me you hated me?
ODO: Vividly.
QUARK: I just wanted you to know I meant every word of it.
ODO: So did I.

The whole episode was great. One of my favorites. Only matched by the novel Fallen Heroes, also Odo/Quark -centric.

In Call to Arms, Ziyal has recommended that Garak be allowed to design Leeta’s wedding dress, that it would be beautiful. Garak says, “My dear, I find your blind adoration both flattering and disturbing...”

Later in the episode Garak is regretting not shooting Dukat when he had the chance. Odo says, “You’d shoot a man in the back?” Garak says, “Well, it’s the safest way, isn’t it?”
