"Dawn" is super boring and "Stigma" is way too on the nose as an allegory but I would maybe watch those again under the right circumstances.

Anything Trip-centric, I can watch. Actually, I could probably watch all of them, at least if I can fast-forward through certain parts. But not TaTV. That just makes me want to put my foot through the television.
A Night in Sickbay and Hatchery are just, well, embarrassing. That would require a LOT of fast-forwarding.

Interesting..good consensus here. Of course, TATV was "one and done" for me. I'd also concur with Dear Doctor, Precious Cargo, and Daedalus (which actually has nothing to do with the main cast, but that Emory was an ass).
I'm surprised no one has mentioned Extinction yet - well except Anthony Sabre as it does fall in Season 3! Personally , I don't have a problem with it and have watched a few times, but I understand it's considered a "stinker".

I wouldn't actually refuse to watch any (I'm sure I'll be watching them all again in the future), but the ones most easily and painlessly skipped are:

I like Hatchery more now I've seen it a few times (the story is actually more about the crew than the captain), and I enjoy the Phlox-related parts of A Night In Sickbay.

This "vision" of the future was a little too dumb, a little too convenient and too obvious for me.
Let's take the prequel idea from Star Wars, a cute dog, some soft-sex, some boy scouts and some "Put away the tricorder, let's have some FUN" rhetoric, mix it together with overused TNG-scripts and voilà TNG 3.0 / Voy 2.0.
The fourth season then showed, that the show could have been a very good one but the audience was scared off already.

I also generally avoid seasons 1 through 3 because I found so much of it to be just plain dull and uninspiring.
I enjoy season 4 the most, but I recognize that much of it is self-referential fanboyism... I mean, explaining away the differences in Vulcan culture in later centuries with a neat mini story arc, the augment story (with Noonian Soong's grandfather, no less?!), an unnecessary explanation for Klingon foreheads in yet another neat mini story arc, and a mirror universe story to provide an unnecessary back story to a TOS episode?
Oh, and I remember liking Daedalus. I thought it was rather trippy like an "Outer Limits" episode.

The entire first two seasons.
Unlike the decon scenes in early episodes, they played it pretty straight in Bounty. I thought it was interesting to see pon farr from a female perspective.
