Honestly, the flashforward I’d like to see at the end of SNW has nothing to do with Pike; instead, it’s much older Spock and Christine finally getting together, perhaps in the wake of Spock learning of Kirk’s “death” in the Nexus.

By that time she will have moved on to that Admiral Roddenberry on all the bridge plaques.

I would be interested in Pike's post-"Menagerie" life, if the SNW team decides they want to explore it.

Who knows. Maybe Pike and Vina end up having a kid who grows up and wants to join Starfleet or at least explore the Universe away from Talos. Combine this with a Captain Harriman Redemption story aboard the Enterprise B.
