As 005 said, people probably know them better as Converse All-Stars now. I haven't heard the nickname Chucks in quite some time!
Maybe it's a regional thing? I've never heard anyone refer to them as All-Stars.
The shoes have been around for decades, but I knew them as "Converse All-Stars" in the 60s and 70s and that's the only name for them I remember; if the Chuck Taylor signature was even on the shoes back then, it sure never registered for me. I'd never heard them called "Chuck Taylors" or "Chucks" until I saw someone (possibly
doubleoh) call them that on this board and had no idea who Chuck Taylor might have been until I looked him up, so I'm thinking it must be a more recent (late 80s? 90s?) nickname for the shoes.
