Nothing needs to be gone. It's just in a different alternate reality.
At some unknown point, one reality branched off and created the mirror universe. Our timeline wasn't erased by that, it just continued next door. Same story here.

Kirk takes command of the Enterprise earlier in 2555 instead of 2266.

Spock's mother, Amanda Grayson dies much earlier.
Pike becomes an Admiral.
No Vulcan means no Red Matter to counter the Hobus supernova, therefore not only is Romulus destroyed again, but the rest of the Quadrant is doomed by the Hobus supernova as well.

In cut footage they wore helmets which had ridges on the forehead, so probably yes.

You're postulating the NuTrek erases events in ClassicTrek. I think this is a mistake. What I meant about Spock staying dead was that his katra had to be removed from McCoy and they had to go to Vulcan to perform the ceremony. With Vulcan gone, they can't do that and wouldn't be able to perform the ritual unless the High Priestess was one of the surviving Vulcans.

You're assuming the nuEnterprise finds Khan and Spock dies saving the Enterprise in the Mutara Nebula. That, now, is a big assumption
