Alright, your top three movies.

Everybody sleeps, even plants go through dormancy cycles. That seems to be a universal trait of life.
Possibly. But, that still doesn't seem like a preclusion for a Horta to serve in Starfleet. Also, comics and books have had Horta crewmembers.
 
1. Wrath of Khan
2. TMP (I get the lack of love due to slow pace, but that movie blew my mind as a kid. My 2001-type experience before 2001).
3. Undiscovered Country - but a lot of love for TSFS here which I agree does break the "odd ones suck" rule.

Yes, good thing it's the "odd ones suck" rule and not the "even ones are good" because it would be so wrong!!!

Do Horta poop?
Well, like so many things Star Trek the have a magical relation to matter and energy. They can dig tunnels and the matter in the tunnel just magically disappears... I mean anyone who's ever dug a hole knows that the main problem is the evacuation of the matter but not to the Horta, apparently. Plus in Star trek you have a slew of beings who not only don't sleep, they don't eat, don't drink don't require anything, and can change mass and size at will!!!
 
I hate these sort of posts even though I was always respond because the microsecond my answer appears I want to change my reply. It depends on my mood, greatly.

Generations - I'm sorry I know it's far from perfect but this was me seeing my favourite TV show on the big screen and watching it today still gives me a warm feeling.
The Motion Picture - I was too young to get that same feeling I got with the TNG cast but, man alive, look at the thing. It belongs in the same category of all the other great 1970s sci-fi like Silent Running, Alien and, hell yeah, 2001.
First Contact - Similar vibe to Generations only this time TNG were back and they were mighty.

If you recall, in "The Devil in the Dark," the Mother Horta managed to extract the main circulating pump for the life support system of the mine on Janus VI and carry it away without damaging it. The pump was returned once an understanding had been reached.

Indeed, maybe they have telekinetic powers or something.

It's not necessary to assume that.

Spock and McCoy could both touch the Horta without losing any part of themselves. Ergo, not all parts of the Horta's skin are corrosive, at least not all the time. The idea that she carried the circulating pump away in a fold or by pinching it is not out of the question.
