With regards to John Leguizamo, I thing he'd do it *because* he hasn't been in anything recently.

maybe so, but it also got her the big break. Nimoy and Shatner used to hate trek, yet here they are still doing trek, Ryan will have to get over herself and realize once she has been in trek, she will be forever known as Seven, its that simple.
Everytime I watch X-Men I wonder when Picard got his new powers for instance. And the one time I meet Walter Koeing (was at the air port) I being stupid yelled its Chekov and ran towards him, he turned around realizing what I was. ITs a simple fact once your on trek you are trek. so get her back for another movie.

Another interesting character would be Eliza Dushku as Spock's betrothed as seen in Amok Time (can't remember the character's full name, but it begins with T'

With the destruction of Vulcan, making babies is a priority for the surviving Vulcans, and would add a sense of urgency when she comes calling to Spock.
And the thought of a s
Saldena/Dushku catfight?? Well I would be hooked right there.

Exactly. Rand can be a very profound thing that happens to Kirk as Chapel can be for Uhura or T'Pring for Spock.

No, it's Kirk in Pike's era. There's no reason why Number One couldn't be featured in a new story. In fact, we're probably not even at the same time frame as when the Cage Happened, so she might get reassigned to the Enterprise still.

Michael Clarke Duncan: He's good at taking physically imposing characters and giving then depth. And he'd look pretty intimidating in Klingon or Orion makeup.
Jeffrey Combs: He's proven to be one of Trek's best guest stars. He's hinted that a Trek movie would be like the Holy Grail for him. I say give him his shot.
If there are going to be Klingons, then one of them should be played by John G. Hertzler. He made Martok one of the most likeable characters on DS9, so playing a compelling TOS era Klingon wouldn't be a problem for him.
