A New Set for the Enterprise

A large recreation deck, a la TMP.

I also agree on science labs.

And an area for storage of consumable supplies, with an officer who has to sign everything out.

A large science lab with lots of blueshirts working in it, reporting to Spock in his office. Sell me on the idea that this is really a vessel of exploration.

Me too. I wanted to see more of the day-to-day exploration operations, to get a behind-the-scenes peek at what goes into being a lead exploratory vessel.

I'd like to have seen Kirk's office. He had to have somewhere to handle mundane affairs, like personnel evaluations and Starfleet updates at some place other than his quarters or the center seat.

Something akin to a Captain's Day Cabin in the US Navy so long as it was used as you suggest. I too would've like to see more of the mundane operations of the ship, make it feel a bit more real.
 
Revisiting my previous suggestion...imagine if some of those turbolift conversations had instead taken place while Kirk, Spock, and/or McCoy were washing their hands....

I'll also throw in the galley, since I don't think anyone's mentioned that yet. Live turkeys and Chef Roddenberry optional.

It would be nice, but I always got the impression that the TOS Enterprise didn't have one. Kirk always seemed to be doing that business from the desk in his quarters. Now, using a briefing room for such meetings, with dividers for privacy perhaps, would make some sense. Just take out the big table and put said dividers in, and you have a set.
 
FWIW, The Making of Star Trek explicitly describes that half of Kirk's quarters as his office.

They were only real turkey's after Charlie changed then from synthetic meatloaf.

It's either that or when Marlena Moreau exits after "oiling her traps," but I'm sure you can see the wall with the book shelf from Pike's quarters in "The Cage."

^Good observation. I know it was the tight budget, but I always thought the captain of a starship should have larger, multilevel quarters.

...And the portholes that we do see have external covers on them!

It's stuff like this which makes me think that most of them probably aren't portholes as such, just instrument stations for the ship's various sensor equipment stations.
That way, the over-windowed dorsal becomes a vast planetary sensor palette (justifying why the ship is always facing that way) and the pretty lights on the rim of the saucer become a precursor to the wide sensor "trough" of the Enterprise-D.
This is even more apparent on the refit-E, where there are (I think) 6 identical clusters of "portholes" present. As windows this is excessive for a starship where even the captain's cabin doesn't feature a view, but perfectly placed for sensing enemies in the far reaches of space

I don't think a CIC makes sense for the Enterprise — her primary mission was exploration. It would have been nice to see more of her scientific areas. Or maybe something that was more of a mission ops than a CIC.
