Coincidentally, I'm considering returning to vegetarianism -- well, pescitarianism. It's my default position anyway, and it's strange, but you and I have come to opposite conclusions: one of the main reasons I'm vegetarian by default is because I find meat to be too expensive!

Same here!! I won't cook meat in my kitchen. Unless it is fish. I'm trying to keep kosher on top of that.

Not eating meat (at least at home) certainly simplifies keeping kosher!

Allergic to cheese! How awful! I remember when my doctor told me to cut back on consuming foods like bread and cheese. We laughed, and laughed, and laughed some more. I did cut back severely on the bread, but the cheese? Eh, I've toned it down, but I still consume quite a bit of it. I love cheese.

Went to the store today and they had Mac'n Cheese flavored ramen noodles in a cup for 26¢/ each. I never saw it before. :lol:

I lapsed and bought some chicken tenders last night. Then I woke up this morning to realize, I could of bought the Chik'N tenders instead.

There is no comparison, though. I had some chicken tenders yesterday, too, and they were so much better than their veggie counterparts. That's not to say I don't appreciate the efforts made by such companies, just... there is no comparison. :lol:

I used to make them from scratch when I worked at a restaurant in my early 20s. I usually made them Cajun style. :D
 
Man I can't stand instant crap anymore, I love to make all my food from scratch; from a basic tex-mex macaroni and cheese, to fancy french food, if my fiance wants it. She tends to dictate what I make in the Kitchen, since I'm the only one in the relationship that can cook...

Where was I? Oh! It's always been more about quality, not quantity for me. Since all I do for 8+ hours a day is sit in front of a computer working, and most of my exercise is from taking the dog out for a walk...or two.:lol:

For those who want to learn how to cook I would recommend these guys from Sorted, most of their recipes are simple, cheap, and most importantly delicious.

As for me: My most famous recipe is the "Super Burrito", One of these will fill a grown man for a day! Next time I cook it I'll add a Pic.

Ingredients:

1lbs pkg of meat(can be ground beef, steak, chicken, pork, fish, hell eggs if you want this for breakfast)

1 Jalapeno Pepper, diced

2 Bell Peppers (I go 1 red, 1 green), cut into long strips

1 Medium Onion, Diced

2-3 Cloves of Garlic

1.5 Cups of uncooked rice

3 cups of Stock (what ever your meat is go get that. Chicken stock if your getting pork!)

1-2 Lemons, or Limes

A handful of fresh Cilantro

1 Can of Beans(Black or Kidney)

2-3 Avocados

Cheese of your choice, I recommend a good Monterrey Jack.

A tomato or two

Taco Seasoning
(Paprika, Garlic Powder, Onion Powder, Cumin, Chili Powder, Salt, Red Pepper Flakes, and Cinnamon (It's all about dat flavour balance!))

1 pkg of wraps, preferably 12 inch. Most stores sell it at 10 inch
(I tend to buy the Sun dried tomato flavour)

Salsa-(Either go buy it, or go get a recipe on Salsa Fresca)

Directions:

Step 1: Chop up your veggies! Dice the onion, Remove the seeds of the Jalapeno, dice it. Julienne the Peppers, smash and finely chop up the garlic. Halve and pit the Avocados, set the avocados aside with half of the chopped garlic.

Step 2: Put pan on stove top, turn burner on to 8(Mine goes up to eleven) add oil, butter, whatever you need to grease it. Toss in red pepper flakes.

Step 3: Add onions, peppers, and the other half of garlic. Saute till Translucent, then add meat. Fry until brown.

Step 4: Add lemon Juice, taco seasoning a little bit of water, or stock to de-glaze pan. Add the beans. Turn Heat down to about 2-3. Simmer for 10 - 20 minutes

Step 5: Start the rice, if you don't know how to cook rice. Find directions. Google is your friend.

Step 6: Put the avocado flesh in a bowl, combine with lemon juice, garlic, tomato, cilantro, and Salt and Pepper to taste.
Roughly mash and mix everything together, and... BAM! Really freaking good Guacamole

Step 7: Rice should be done, add it to a new bowl. Add lemon zest and juice, plus cilantro. Mix well with a fork.

Step 8: Put every thing together. I usually do the guac, and salsa first. Then rice, cheese, and finally the meat mixture.
Wrap it up.

Should make up to 8-12 burritos.

Word of Caution: Do not under any circumstances eat more than Three/Four. You will end up with a food coma, and most likely experience all the symptoms, Pepto Bismol cures. You have been warned.

I am a proud omnivore, yet I can do simple math. If you really believe you are anemic, go to your local Dollar Tree or WalMart and purchase Iron tablets (ferrous sulfate).

I have no qualms about any diet, IF it works for YOU. However, I am no champion of people who delude themselves... on any topic.

Firstly, iron pills around here aren't that cheap, we don't have a Dollar Tree, and the nearest Walmart is two towns over. Secondly, I'm not adding yet one more pill to the ones I already have to take every day. Now, onto the matter itself:

My doctor told me I was anemic, and so I chose to start eating meat again as the preferred solution. Why the hell would I delude myself, and where did you get the idea that I was deluding myself, what with your wholly unwarranted passive aggressive comment?

Seriously, your comment was totally unnecessary.

It's a very good idea to do one course (ie one bottle) of iron if you're anemic to boost you up and then continue to treat it with diet. Your body absorbs the iron in red meat much better than in vegetables, but all red meats are not the same. Worth a little research and as I said a small amount of a cheap cut a day is a great way to build it up. Also remember that vitamin c helps your body absorb iron, and a lot of iron tablets have that included so if you do decide on one course and there's a choice pick the one with vitamin c.

Anemia can screw with a lot of other stuff and ability to absorb nutrients so it's worth nipping it in the bud. A few weeks of one tablet a day is worth it.

I didn't know that about iron. I thought that returning to meat would take care of it automatically. If iron pills can help keep everything in good working order, then I'll get them. I'm sure I can get a deal from Amazon.

That said, aside from the (very occasional) fast food offering, I much prefer very lean cuts of meat. I've found that I'm not as big a fan of chicken as I was before I went vegetarian, and seem to be actually craving beef. It feels odd to be craving something like that. Still, I'm being very careful. I'm having to eat very cheap at the moment, so I'm making the best choices I can.

Side note, I just did a quick search on Amazon, and found a 180 day supply of iron tablets for $2. With shipping, it's still cheaper than our local Walgreens, which charges $7 for a bottle of iron pills. We do have a Family Dollar store, but they're always out of their vitamins (except the really expensive name brand ones), so this looks like the best deal. I have to save every penny I get, so I do appreciate the advice!
 
IF it doesn't come with vitamin c pick yourself up some vitamin c tablets if you don't think you'll be eating an orange every day during your iron course.

People vary greatly as to how well they absorb iron. Someone might start eating steak every day from an anemic position and be fine, but if you're hit and miss and resorting to hamburger (which may be fairly adulterated with non-iron rich parts of the cow not to mention other things) it is a good idea to do a course of it. I'm pretty sure most doctors would say the same, especially as it cannot hurt.

Check out ebay too. If they have great feedback and are a regular vitamin supplier you can get some good deals. A lot of excellent mail order companies sell on ebay as well so that's a good way to find them.
