What do you mean by "in between costume?" Was it actually worn in the series or only for promotion?
You start out with "The Cage" costume: Spock in blue tunic with no black collar, and a science insignia.
Then comes the "Where No Man" version: Spock and Kirk both in chartreuse with no black collar, and both have command insignias.

Since Star Trek's sets had already been built by the time Shatner came aboard, I wonder why they didn't use them for the publicity shots.
