The Dorito Taco.

To me, the only thing that would make the Dorito Loco Taco any better would be if they made a Cool Ranch Dorito taco. I would then eat at Taco Bell four meals a day.

I live in America. If I can't find dried nacho cheese then we've done something very wrong.

It's called a clone recipe and it's something that's been done for ages. The ingredients on the Doritos bag includes various cheeses (presumably dried cheeses) and seasonings on top of the usual dies and preservatives. My first crack at it last night came out fairly good, a trip to the store today and some selective ingredients I think I can come close.
 
Oh, I agree (not about your mom's meatloaf, of course :p). I wasn't arguing that the recipe I know was "best" in any sense of the word. I was just surprised by the sauce-heavy ingredients. I always thought about meatloaf as a "light" meat dish (compared to, say, stew or roast).

Like they said, tons of variations. I put some ketchup on the top before baking, but I don't mix it in. And I use ground mustard in the mix, not a sauce.

I like light meatloaf as well, with a saucy top. I use a mixture of sometimes lamb (depending on the price), beef and pork and mix it very, very lightly. Sautéing the onion and garlic helps to mellow the flavor as well. Another good trick is to poke holes in the bottom of the foil after wrapping it and bake it on a rack so that any fat runs out, which it prevents it from being very greasy.
 
That being said, the Cheesy Gordita Crunch is easily the great fast food offering of all time.

Thats debatable, especially when you compare it to this wonderful coronary inducing meal item:

Regarding "light" vs. "heavy" meatloaf, I've never considered meatloaf to be light. It seems like an odd thought. I mean, it's a loaf of meat. What's light about that?
 
God, those KFC "garbage bowl" meals were horrific.

Making meatloaf I use salt and pepper, egg, garlic-herb croutons and then ground beef and, really, I think that's about it. Sometimes I might mix in there pork sausage or something but I don't go too nuts. And I like using BBQ sauce as topping for my meatloaf as opposed to katsup. Ick. But I'm no fan of catsup whatsoever. Ketchup. Yuck!

Oh that's certainly on my list. I made a second attempt today with some different ingredients and I think I got closer to it but still missing a "spark" of something. I might need some more specialized ingredients and need to find a more well stocked grocery store than Target.

One thing Doritos are really good for is meatloaf.

Seriously.

I hate meatloaf, unless it's made with Doritos instead of crackers.

Now I want some.
What? What is this tasty sounding madness?!

Do you use nacho cheese or cool ranch? Or one of the goofy other flavors? Do you crumble the chips? And how small? And what size bag of Doritos replaces a box of stuffing (which is what I use in meatloaf)?

So many questions, so much potential!

Use any flavor you like, it really doesn't matter. I think it takes about half a normal-sized bag per pound of ground beef. I admit I typically eyeball it.

My recipe involves:

* 1 pound ground beef
* 1 egg
* Ketchup
* Mustard
* Barbecue sauce
* Doritos

Crumble the Doritos into small bits, like you would crackers. Mix it all together in a big bowl, of course. You could add salt, pepper, and onions, but I typically don't--the Doritos add enough flavor it shouldn't be necessary, and the barbecue sauce enhances it.

Spread the concoction into a casserole dish, then put a thin layer of ketchup on top. Bake it at 350°F for about an hour. Done and delicious!

Oh, man, I have to try and make this now!
 
The Dorito taco sounds horrible, but I made my husband eat one. He didn't think much of it one way or the other.
Anything from Taco Hell sounds horrible; did your husband require a trip to the ER to have his stomach pumped? Hope he didn't get food poisoning.
 
So, I tried the Doritos Meatloaf last night. Didn't include the BBQ sauce, because the info we had here didn't tell me how much or where it fits in.

Not bad, but the Doritos interact with the fat in the hamburger in such a way that the meat became very dry.

Any tips for the next try?
 
Cheez-Its instead of those foul corn abominations.

I took about two bites of a Doritos taco and tossed the rest. Foul monstrosity of a fast food item.
