One of my favorites is from The Emmisary.

(Ezri gasps at this, her eyes blazing in righteous fury at what he just called her....)

I don't remember which episode and I don't know exactly what it was but there was a quote Garak said to Bashier that had something to do with the "boy who cried wolf" story. It was Garak's take on it and it was pretty funny....

Hec, I haven't seen an episode of DS9 in over ten years so I just don't remember what ep...

Few things sum up how great a character Garak is better than this:
