Short Round most likely ended up in a factory making designer sweaters for Kathy Gifford's clothing line.
I always figured he was either dead by the time of Last Crusade, or else Indy scraped together enough money to send the kid off to school.
I agree it would've been cute to see him make a cameo at the wedding in Crystal Skull (along with John-Rhys Davies as Sallah, of course)
Sallah would have been dead by this time (1957) and even if he wasn't, he and Indy wouldn't be friends due to political differences between Egypt and the U.S.A.
I think you're all forgetting something important: namely, that this is a Spielberg movie we're talking about here.
Given that fact, Short Round's ultimate fate should be obvious: his broken family was reunited, and they lived happily ever after.

I was 11 when Temple of Doom came out and I know they included Short Round to try and appeal to kids...but it can't work, as I was relating to Indy.
Though it doesn't make a lot of sense, kids will say "Oooh! I'm THAT guy!" when they watch a movie, so kids like to think that somehow they are the sweaty, 38 year-old archeologist and the kid is just in the way.
