What Did You Have For Dinner Last Night?

Tonight it's vegetarian gumbo, and there's a fun reason:

Disney's new animated movie is about a New Orleans princess who dreams of being a gumbo chef. Disney selected four 2nd grade classes around NYC to participate in a veggie gumbo cook-off, and mine was lucky enough to have been chosen! The kids all wore chef hats, and we cooked gumbo today in class. Coincidentally, my dad's family is from New Orleans and his mom is Cajun. My uncle is a chef and sent me his Gumbo z'Herbes recipe, which turned out great! The kids adored it, and Disney sent a panel of 6 judges who brought the kids trading cards, activity sheets, and movie posters -- if we win we all get sneak preview passes to the movie! (We'll find out tomorrow.) I knew they were bringing fun things for the kids, but I didn't know that they were also bringing me a Princess and the Frog Cajun cookbook (which is adorable), and a pair of slippers that look like frog's feet!

It gets its share of stick, but personally, it worked great for me. The weight poured off, and it's stayed off since. Just remember to transition gradually to a regular calorie controlled diet after, once you get to within a month or so of your target weight, so you don't yoyo once you reach your target and come off the diet. Good luck!
 
Lasagne tonight.

I deserve it, I think, having made an effort to keep myself fit this last week (or at least more limber). :bolian:
 
Super hot homemade chili. Threw a bunch of Scotch Bonnets in there :eek: Reheated the leftovers tonight too, and it tasted even better than last night.

I find that homemade chili always tastes better the day after cooking it. :)

Definitely :drool: From now on, I'm going to start keeping my chilli in the fridge over night before serving it. Not too keen on reheating things, I'm a bit paranoid about food poisoning (especially with beans), but it turned out ok last night.
