Yes, but that´s basically the only proof there is. Did we ever see her with the coin when she was tied to the chair or whatever it was?

What do you think is Rachel dead or will she return in the next Batman movie as Catwoman?
Since we didn´t see her die, I find it very likely she´s not dead. Nolan won´t end this trilogy with another dark ending. And the butler didn´t show her good-bye-letter to Batman.
Here are two possible plots for Batman 3:
1. Rachel did die. But only metaphorically. She will become Selina Kyle, also known as Catwoman, and Batman will have to face his worst nightmare: fighting the woman he loved and thought was dead.
2. Rachel didn´t die. But will be Batwoman and help Batman in his battle against Catwoman. From the FAQ of The Dark Knight on IMDB:
