I think it's in A Call to Arms where Starfleet deploys the minefield outside the Bajoran wormhole to stop the Dominion forces coming through. But earlier in The Search, Part II, it was shown that the wormhole can be collapsed by detonating photon torpedoes inside it, so why didn't they just do this? Or am I missing something?
 
I believe that in In Purgatory's Shadow, earlier this season, at the end of the episode, the emitter that allows the station to close the wormhole is sabotaged indefinitely, stopping them from ever closing the wormhole again.

Actually, FounderBashir used it to increase the wormhole's strength, making it immune to collapse.
 
Perhaps a Prime Directive issue. Also Starfleet would want to keep the access if at all possible. Then there is Sisko's destiny -

Yep. O'Brien said something to the effect that a Warp Core Breach inside the wormhole wouldn't be enough to collapse it after what the Founder did.
