Why didn't Spock destroy the Red Matter with his torch?

Because he's now living in a past that doesn't have the technology to create Red Matter... and he needs it to destroy the supernova star in oder to prevent the disasters of his previous timeline.

The Red Matter is not inherently bad, only Nero bastardized use of it was...
 
Given how powerful red matter was he had an insane amount that's for sure.
 
If you really want to hit the plot hole... why did Nero simply go to the star that went supernova when he arrived back in time, and drop red matter into it. Spock was basically trying to do that when he was going to drop the red matter into the supernova.

It would of saved Romulus and reset the timeline... making for a 9 minute movie...

It would have saved Romulus in the new timeline. There wouldn't have been a reset.

Somewhere, in some time-frame, Nero just read this and slaps his forehead and says, "D'OH"!!!

Unfortunately you are correct sir, so allow me to rephrase. No one would pay 9 dollars to see a 9 minute movie with a storyline beyond "You have a *, I have a *, lets shag"

:lol: :lol: :lol: :lol:... I just about pissed myself reading that... and the scene that came to mind was the whole Romulus 1,000 times and die an agonizing death... scene.

It would have saved Romulus in the new timeline. There wouldn't have been a reset.

Exactly. Even if he said Romulus in this timeline, he (personally) still wouldn't ever have his pregnant wife.

I think he did. Look at where Nero's ship emerges the first time, when it fights the Kelvin. There's a huge star there. Look at where Spock's ship emerges 25 years later. No star, but nebulous gases. I think Nero took the opportunity to take care of it while he had the chance. And why no paradox? Alternate timelines....
 
Well, all I have to remember is how horrified Nero's second was when ordered to fire everything at the jellyfish. "Ignite the RED MATTER?!?"

I think he did. Look at where Nero's ship emerges the first time, when it fights the Kelvin. There's a huge star there. Look at where Spock's ship emerges 25 years later. No star, but nebulous gases. I think Nero took the opportunity to take care of it while he had the chance. And why no paradox? Alternate timelines....

Actually I just realized that Nero did not have the red matter to create the black holes until he picked up the Jellyfish. So now it doesn't make much sense. :p

umm... runaway blackhole that would have eaten up the entire system and maybe the quadrant?

I don't think so. The quantity of Red Matter available on the Jelly Fish looked enormous in comparison to the amount needed for a given result, but it didn't look to me to be especially massive, and it's mass that determines the Schwarzschild radius of a black hole. Assume the single drop of Red Matter used had a mass of a kilogram (amazingly dense substance); if it were condensed into a black hole, the material would collapse into something roughly the diameter of a proton (that's a very rough estimate) with a similar event horizon. The gravitational pull of the droplet would be no different from any other one kilogram mass -- essentially nill -- and the black hole would likely evaporate quickly before it could consume any other matter.

Maybe this is why they needed to inject the substance into the core of a planet ... molten iron might be sufficiently dense to sustain and grow the black hole, eventually condensing the core into a microscopic dot with a mass equivalent to most of the planet. Then the rest of the mantle and crust would tumble, unsupported, into the core. It's a process that should have taken weeks, maybe even months, but Mr. Abrams didn't have time to wait.
