I'm not sure. I've about given up on the EU because everything I read is little more than fanwank. It makes the already small universe even smaller because not one adventure goes by without Boba Fett (what is he now, like 70?) and a bunch of the aging characters run around like they're still in their 20s and 30s. Not to mention I don't know how many Death Star-doomsday device ripoffs they've encountered.
If they were going to make a sequel trilogy, I suppose a reworking of the Jedi Academy might be cool, with Luke being the Obi-Wan sage and one of the pupils turning to the Dark Side (preferably a Skywalker). I know I complained about fanwank, but I think it'd be cool to continue the Kamino clone aspect and have Emperor Palpatine have a clone (so you could also have returning actors like Ewan McGregor and Hayden Christensen and Natalie Portman fighting alongside Mark Hamill, Harrison Ford and Carrie Fisher). Some galaxy-spanning threat that brings the prequels and the originals together for a badass finale.
